Quick Weeknight Meals
Spicy Whiskey BBQ Burger Sliders
There is a slight nip in the air which means one thing…well, maybe two thing:) 1. Fall is just around the corner. 2. FOOTBALL season is here!! What I love most about football season is the gathering and eating. Even if you are rooting for opposite teams every one is eating, laughing, and having a great time! When we host a football party I always make sure everything is as close to bite-size as I can get it. These spicy little burger bites are easy to make and so delicious! Now, let’s watch some football!
PS – I will be making these delicious bites this Friday at the Nashville Home Show. I hope to see you there! If you still need to purchase tickets you can use the code: CHEF and receive a $3 discount!
chicken sausage and broccoli orecchiette & a GIVEAWAY
There is a whole lot of stuff going on around here. First, I have been asked to do not one…but TWO cooking demonstrations at this year’s Nashville Home Show. Cooking demos are always so much fun for me, I really enjoy teaching people to cook a dish! The reps at the Nashville Home Show were kind enough to supply me with a few sets of VIP Passes to the show! I will be giving away two of the passes to One lucky winner through this post (details below).
Mexican Lasagna
Who is ready for a quick and delicious meal? I know I am after all the holiday cooking. I have made this recipe a lot and it is always one of my quick go-to dinners. I love that you can use just about any meat you have on hand i.e. ground beef, ground turkey, ground chicken, shredded chicken..you get the point. I made this particular one with shredded chicken and it did not disappoint. Next time I may try it without meat and maybe add some pinto beans! I hope you enjoy this dish as much as we do. Happy New Year!

- 2 cups chicken, cooked and shredded
Parmesan Crusted Tilapia
I owe you guys a huge apology for keeping this recipe to myself for so long. The first time I made this was sometime last summer and it is now one of my favorite go-to meals. We have it quit often and both Jacob and Lucy get super excited when they come to the table to see this fish on their plates. I love that they get excited for dinner makes me smile for sure! I came up with this recipe while I was grocery shopping and saw a box of pre-made parmesan crusted tilapia. I knew this was something I could easily re-create at home. This recipe takes no time to put together and I almost always have all of the ingredients in my pantry.

- 2 lbs. tilapia filets
Stovetop Mac and Cheese
This is one of those recipes where after you make it for the first time you want to kick yourself for not making it sooner! This recipe is extremely versatile. It can easily be a delicious side to accompany any meal or it can be the main dish. You can add a number of ingredients to make this a very quick dinner. Some of my favorite things to add to this pasta are: Ham and peas, grilled or leftover chicken and frozen broccoli, sauteed onions and bell peppers or steamed squash and zucchini. The possibilities are endless. Leave a comment letting me know how you served this dish and what you added to it.

- 1 lb. pasta (any shape will do)
12-Minute Chicken & Broccoli

I am constantly trying to find quick, easy and healthy meals to add to my weekly menu. This recipe is all of the above and then some and has now earned a top spot in my quick weekly meals category! I hope you enjoy this dish as much as we did.
