My hope is to inspire you to get in the kitchen and have an adventure. Make something you have never tried before.  Push yourself to make something you have always been intimidated to make but most importantly to have fun and make memories!


Patriotic Popsicles

Happy 4th of July!  In honor of the holiday I created a red, white and blue Popsicle.  These popsicles are not only incredibly adorable they are also healthy!  We will be enjoying these later while watching some fireworks!

Ingredients
  1. 1 cup water
  2. 3/4 cups sugar
  3. 1 1/2 cups strawberries, hulled and quartered
  4. 1 cup blueberries
  5. 1 cup plain yogurt, I used greek
  6. 1 tbsp. honey
  7. 2 tsp. lemon juice, divided
Instructions
  1. Add the sugar and water to a small pot over medium heat. Stir to combine. Cook for 5 minutes or until the sugar has dissolved. Cool the simple syrup completely.
  2. Add the strawberries, 1/3 cup simple syrup and 1 tsp. lemon juice to a blender. Blend until well combined. Add the mixture to a measuring cup with a spout or a plastic squeeze bottle. Set aside.
  3. Add the blueberries, 1/3 cup simple syrup and 1 tsp. lemon juice to a blender. Blend until well combined. Add the mixture to a measuring cup with a spout or a plastic squeeze bottle. Set aside.
  4. Add the yogurt and honey to a blender. Pulse a few times until the honey and yogurt are combined. Add the mixture to a measuring cup with a spout or a plastic squeeze bottle. Set aside.
  5. Starting with the strawberry mixture fill each popsicle mold about 1/3 the way full dividing the mixture evenly between all the molds. Freeze for one hour.
  6. Add the yogurt mixture evenly between the molds. At this point add the popsicle sticks. Freeze for one hour.
  7. Last, add the blueberry mixture evenly between the popsicle molds. Freeze overnight or at least for 6 hours.
